Beef Fatoosh Bowl

Every so often, courtesy of a gift subscription from my mother-in-law, I pull out the latest edition of Food Network magazine from my mailbox. She and I have always loved finding new recipes, and in the days of all things being digital, it's fun to have a hard copy to thumb through. The most recent edition had a recipe incorporating pita chips, so of course I felt inspired and wanted to share my own version this Beef Fatoosh Bowl. This is also the perfect recipe to use up some of those cucumbers and tomatoes that are growing like crazy this time of year!
